- Named after the village in which it is made by the Berkswell Cheese Company using milk from their own sheep
- Matured for about 4 months
- Has a hard golden-orange rind blotched with mould
- Cream coloured cheese with a hard, dense texture
- A complex, sweet, nutty flavour
