Crozier Blue
- Made at Beechmount Farm in Co. Tipperary, this cheese is Ireland’s only sheep’s milk blue.
- It is a slowly matured cheese ready at a minimum of 12 weeks, but can be matured for up to 11 months.
- It has a rich, full and well-rounded flavour and is gently salty.
- It has a distinctly rich, creamy texture, offset by a touch of spice.
