Chocolate crunch bites

On the farm, we are members of the Organic Herd cooperative. It is to Organic Herd that we sell our milk. One of the products our milk is used to make is organic butter (available in the farm shop). This chocolate crunch is a great buttery recipe to make with the children or grandchildren.

Ingredients:

  • 250g Organic Herd Salted Butter
  • 175g Golden Caster Sugar
  • 125g Desiccated Coconut
  • 100g Cornflakes
  • 12g Cocoa Powder
  • 200g Self-Raising Flour
  • 150g Cooking Chocolate – Green & Blacks organic is a good one

Instructions:

  1. Preheat your oven: Preheat your oven to 180°C (350°F) and grease a baking tray or line it with parchment paper.
  2. Prepare the butter and sugar mixture: In a microwave-safe bowl, melt the salted butter (250g) and golden caster sugar (175g) together. You can do this in the microwave or over a saucepan of simmering water. Stir until well combined.
  3. Mix the dry ingredients: In a separate large mixing bowl, combine the desiccated coconut (125g), cornflakes (100g), cocoa powder (12g), and self-raising flour (200g). Mix well until all the dry ingredients are evenly distributed.
  4. Combine wet and dry ingredients: Pour the melted butter and sugar mixture over the dry ingredients. Mix everything together until you have a thick, sticky dough.
  5. Bake: Transfer the dough to the prepared baking tray and press it down evenly using the back of a spoon or your hands. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the edges are slightly crisp.
  6. Add chocolate topping: While the bake is still warm, melt the chocolate bar in a microwave-safe bowl or over a saucepan of simmering water. Drizzle the melted chocolate over the top of the bake, spreading it out evenly with a spatula or the back of a spoon.
  7. Cool and slice: Allow the bake to cool completely in the tray before slicing it into squares or bars. Enjoy your delicious Crunch Snack as a tasty treat or snack!

You can customise your chocolate crunch by adding nuts, dried fruit, or extra chocolate chips to the mixture before baking.
