Kohlrabi slaw

Try a deliciously simple side dish of kohlrabi slaw, which is quick to make but an unusual twist on a classic. 

Ingredients

1 Growing Well kohlrabi, peeled and shredded

1/4 head red cabbage, shredded

2  medium carrots, peeled and grated

1/2 a small red onion

4 tablespoons chopped fresh coriander or parsley

2 tbsp sunflower seeds

4 tbsp mayonnaise

1 tablespoon cider vinegar

Pinch salt

Pinch sugar

Method

Combine the kohlrabi, cabbage, carrots, onion, coriander or parsley, and sunflower seeds in a large bowl. In a smaller bowl, whisk together the mayonnaise, cider vinegar, sugar, and salt. Pour the dressing over the slaw, and mix until fully coated. 

Chill before serving.
